The Karl May Sauvignon Blanc pairs perfectly with a wide variety of dishes and is simply enjoyable. Its fragrance makes it perfect for Asian cuisine, fish and seafood, or dishes with light poultry like lemon chicken. The tasting experience is particularly intense when served at 8 – 10°C in a good white wine glass.
Winemaking – Karl May
The vines for this Sauvignon Blanc estate wine from Weingut Karl May grow in organically farmed vineyards in various locations with sandy loess-loam soils. To harvest ripe grapes in the fall, Fritz and Peter May begin as early as January with gentle pruning and early defoliation of the grape zone for optimal sun exposure, as well as yield reduction through green harvesting.
The selective hand-picking of the grapes often takes place in several passes. The journey to the new winery is short, where the grapes are gently processed further. The mash is gently pressed, and the must is spontaneously fermented, remaining on the lees for a long time and aged in stainless steel tanks.
