Frying with Cast Iron
You have chosen a Le Creuset cast iron pan. It certainly takes some time to get used to a cast iron pan after using a coated aluminum or stainless steel pan, as it has different frying properties. It takes longer to heat up, but then holds the heat longer and fries more evenly, and the pan forms (and this is important) a patina. Initially, these are dull, grayish spots, usually starting in the middle of the pan, until the bottom of the pan is covered with them and then the many small spots become one large spot. This is exactly normal behavior for a cast iron pan. Please do not try to wipe off the patina or remove it in any other way. The more patina, the better the pan fries, because the patina is a natural non-stick coating, so to speak. Properly seasoned, the pan will last for generations. When frying with cast iron pans, it is important that they are always placed on the stove with good oil, and a medium heat is sufficient. To clean, it is usually enough to wipe the pan with a paper towel; residues can be removed with hot water.
