Pelagonia Ajvar is a delicious spread made from the finest roasted peppers in Macedonia. This tasty meze, made from sweet red peppers and roasted eggplants, is a wonderful culinary discovery and still a secret tip. Pelagonia Ajvar is incredibly versatile; it pairs perfectly with salty cheeses like feta or Pecorino, and makes a flavorful spread for sandwiches or falafel wraps. The fruity, mild pepper spread tastes great with meat dishes like kofta, lamb skewers, or grilled foods, but even fish like sea bream can benefit from a spoonful. Ajvar – Vegetable Paste and the 5th Season

In Macedonia, in the Balkans, ajvar is a kind of national treasure; the vegetable paste is served with numerous dishes and is an ingredient in many local recipes. Ajvar is of such great importance in the former Yugoslavia that the harvest season in late summer, the so-called 5th season, is also referred to as ajvar. So, in late summer, when the Macedonian peppers, valued for their particularly good taste, have developed their red color, smoke clouds rise in gardens across the country. This is also the case for the approximately 650 small farmers of the Pelagonia cooperative in southwestern Macedonia. They diligently harvest their tasty peppers and grill them over an open fire until the skin is completely black and charred. The peppers are then meticulously peeled by hand to be processed into delicious ajvar with equally roasted eggplant, sunflower oil, and salt.

Ajvar is a traditional Macedonian pepper spread found not only in rural home kitchens but also in the trendiest restaurants in the hip Debar Maalo district of the capital, Skopje. Some even whisper that ajvar could replace the popular chickpea spread hummus in its popularity.
