Even though fish is on the menu in almost every region of Italy, there is only one Italian producer of canned sardines: Sardine Pollastrini di Anzia. Since 1889, the delicious sardines, fished off the coast of Rome in the Mediterranean, have been processed by the Sepe family in the port city of Anzia and turned into the finest preserved fish products.
The Millesimate sardines are a delight for gourmets and a rare delicacy that melts in your mouth; a harmonious fusion of sea and sun. The sardines for Pollastrini are still caught with the Gozzo, a boat that illuminates the sea with lamps at night to attract sardine shoals. The vintage sardines are exclusively fished at the end of the fishing season in September and November, when they are plump and aromatic. The next morning, the fresh sardines are hand-picked, gutted, and cleaned. The Sardine di Anzio are hand-cut to shape and placed in the nostalgic tins with red chilies and olive oil.
The vintage sardines are characterized by a good taste and their special texture. You should turn the tins occasionally so that the sardines are evenly soaked in olive oil, and you will notice that both consistency and taste change over time.
