Soft Amaretti Orange sind weiche Mandelmakronen von Amaretti Virginia aus Ligurien, in denen kandierte Orangenschale die Bittermandel begleitet. Kein knuspriges Amarettino, kein Marzipan, kein Gebäck mit Mehl.
Soft Amaretti Orange sind ein weiches Mandelgebäck von Amaretti Virginia, das aus Aprikosenkernen, Zucker, Eiweiß und kandierter Orangenpaste gebacken wird. Wer bei Amaretti an hartes, trockenes Gebäck zum Eintunken denkt, wird hier umdenken müssen. Diese Stücke geben schon unter leichtem Druck nach. Die Kruste ist kaum dicker als Papier, darunter bleibt der Kern feucht und dicht. Erst danach meldet sich die Orange, und zwar nicht als Süße, sondern als leicht bittere Schale. Wer das einmal probiert hat, misst Amaretti danach an Sassello, nicht mehr an Saronno.
Bittermandel trifft Orangeat, nicht Orangensaft
Soft Amaretti Orange schmecken nach Bittermandel und kandierter Orangenschale, wobei die Schale mit ihrer feinen Bitterkeit die Süße des Teigs bremst. Die Orangenpaste besteht zu 49 Prozent aus Schale, nicht aus Fruchtfleisch. Das ist der Grund, warum die Frucht hier dunkel und warm wirkt, näher am Orangeat als am frisch gepressten Saft.
Im Mund öffnet sich das Stück in zwei Schritten. Zuerst der Puderzucker, der auf der Zunge schmilzt. Dann der Kern mit seinem Marzipan-Charakter, in den sich kleine Schalenstücke mischen und beim Kauen ihr ätherisches Öl abgeben. Der Nachhall ist lang und ein wenig herb. Das Aroma der Aprikosenkerne, in Ligurien Armelline genannt, liefert dabei die typische Amaretti-Note.
Die Textur verändert sich mit der Temperatur. Direkt aus einem kühlen Vorratsschrank ist der Kern fest und schnittbar. Bei Zimmertemperatur wird er nach einer halben Stunde weich und fast cremig. Wer den Unterschied zu Marzipan sucht, findet ihn in der Körnung. Die Kerne sind fein gemahlen, aber nicht zu einer glatten Paste verarbeitet. Beim Kauen bleibt ein leichter Widerstand, der an frisch geriebene Mandeln erinnert.
Wer Orangengebäck wie Kandiszucker erwartet, süß und ohne Kanten, wird die Herbe der Schale als zu präsent empfinden. Sie ist gewollt und macht den Unterschied zur milderen Zitronen-Variante aus derselben Backstube.
Zum Espresso, zur Schokolade und in die Ofenpfirsiche
Diese Amaretti passen zu allem, was Röstaromen oder Bitterkeit mitbringt, weil die Orangenschale beide Richtungen aufnimmt. Drei Stücke neben einem doppelten Espresso ersetzen den Nachtisch nach einem langen Essen. Zu einer Tafel Zartbitterschokolade mit 70 Prozent Kakao entsteht die Kombination, die man aus der Weihnachtsbäckerei als Orangeat und Kuvertüre kennt.
Für ein Dessert halbieren Sie vier Pfirsiche, entfernen den Stein und füllen die Mulde mit zerbröselten Amaretti. Ein Stück Butter obenauf, 20 Minuten bei 180 Grad. In Piemont und Ligurien gehört diese Zubereitung zum Sommer wie das Eis. Über Vanilleeis oder Mascarponecreme genügen zwei zerdrückte Stücke pro Portion.
Zum Wein passt die Orangennote zu allem, was selbst Orangenschale trägt. Ein Glas Vin Santo bringt Nuss und Karamell mit, ein Moscato d'Asti Süße und Perlage. Ein trockener Weißwein ist nicht geeignet, seine Säure lässt die Amaretti stumpf wirken. Für einen Käseteller legen Sie zwei Stücke neben einen gereiften Pecorino. Salz und Bittermandel ergänzen sich, die Orange verbindet beide. Auch ein cremiger Gorgonzola dolce verträgt die Kombination, weil seine Süße die Herbe der Schale auffängt.
Gut zu wissen: Für Tiramisu oder einen Kuchenboden eignen sich diese Amaretti nicht. Sie sind zu weich und zu feucht, um Struktur zu geben, und verschwinden im Teig. Dafür brauchen Sie die knusprigen Amarettini, die Sie im Regal für Süßgebäck und Kekse finden.
1897 geschützt, seit 1860 nach demselben Prinzip gebacken
Amaretti Virginia ließ die Marke 1897 eintragen, doch die Rezeptur geht auf das Jahr 1860 in Sassello zurück. Sassello liegt im Hinterland von Savona auf rund 400 Metern Höhe, und der Ort ist eng mit dem Gebäck verbunden. Die Familie Rossi backte ihre weichen Amaretti zunächst für die Gäste des eigenen Wirtshauses, später für ganz Italien.
Der Unterschied zu den bekannten Amaretti aus Saronno ist grundlegend. In Saronno werden die Stücke trocken und knusprig gebacken. In Sassello bleiben sie weich, weil der Teig aus 46 Prozent Aprikosenkernen und Eiweiß besteht und kein Mehl enthält. Mehl würde Wasser binden und beim Backen aushärten. Genau das passiert bei den Amarettini, die deshalb monatelang knusprig bleiben. Ohne Mehl hält das Eiweiß die Masse zusammen, und der hohe Kernanteil bleibt feucht. Die Oberfläche reißt beim Backen fein auf, weil der Puderzucker außen schneller trocknet als der Kern.
Für die Orangen-Sorte wird die Schale zuerst in Sirup kandiert und dann als Paste unter den Teig gearbeitet. Der Schalenanteil von 49 Prozent ist hoch, viele kandierte Orangenpasten kommen mit deutlich weniger aus. Jedes Stück wird einzeln geformt und in die runde Metalldose gelegt, die 140 Gramm fasst. Zwischen Backen und Verpacken liegt eine Ruhezeit, in der sich die Feuchtigkeit im Kern gleichmäßig verteilt. Erst danach schließt sich die Dose.
Die Dose, die bleibt, wenn das Gebäck aufgegessen ist
Die Amaretti kommen in einer verzierten Metalldose, die nach dem letzten Stück als Aufbewahrung im Küchenregal weiterlebt. Das macht sie zum Mitbringsel, das nicht nach Verlegenheit aussieht. Für Gastgeber, die selbst kochen, ist eine Dose aus Sassello ein klares Signal. Sie sagt, dass der Gast sich mit dem Thema beschäftigt hat.
Auf der Kaffeetafel ersetzt die Dose das Gebäckbrett. Stellen Sie die Amaretti eine halbe Stunde vorher bei Zimmertemperatur bereit, dann ist der Kern weich und das Aroma der Schale voll da. Zu einer Espressokanne für vier Personen reicht die halbe Dose. Der Rest hält sich verschlossen für den nächsten Besuch, ohne dass der Kern trocken wird. Für ein Dessert ohne Aufwand legen Sie je zwei Stücke neben eine Kugel Vanilleeis und ein Stück dunkle Schokolade. Mehr braucht es nicht.
Als Begleiter zum Kaffee nach dem Essen, als Ergänzung zu einem Geschenkkorb mit italienischen Spezialitäten oder als kleine Aufmerksamkeit für Kollegen. Die Beeren-Variante mit Heidelbeere ergibt zusammen mit der Orange ein Paar für zwei Jahreszeiten. Kühl und trocken gelagert bleibt der Kern in der verschlossenen Dose über Monate weich.
Ein Gebäck für alle, die Amaretti bisher nur knusprig kannten und wissen wollen, wie sie in Ligurien seit 1860 gebacken werden.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as genussland.de. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

Refrigerated Shipping
Our product range includes food items that react differently to heat. To ensure that every product arrives in perfect condition, we handle the shipping of two product groups with particular care.
Products requiring refrigeration
These items are marked with the note "kühlpflichtig" (requires refrigeration) in our shop — for example, Bordier butter, Parmigiano Reggiano from Cavola 993, Pancetta and Guanciale from Falorni, mountain herb ham and Tyrolean dumplings from Steiner, Prosciutto Crudo and truffle butter from Viani. We generally ship these products by express delivery with ice packs. They are only available via express shipping. The shipping costs will be clearly displayed before you complete your order at checkout.
Temperature-sensitive products
These items are marked with the note "temperaturempfindlich" (temperature-sensitive) — for example, salami and bacon specialties from Falorni and Steiner, as well as Goufrais cocoa confectionery. In cooler weather, they can be sent by standard shipping. In warmer weather, we switch the shipping to express shipping with ice packs before checkout — in this case, this shipping method is the only option, and the corresponding shipping costs will be displayed at checkout.
Shipping days for refrigerated and temperature-sensitive orders
To prevent any package from remaining in a distribution center over the weekend or public holidays, we only ship refrigerated orders from Monday to Thursday. Orders placed after Thursday will generally not be shipped until the following Monday. In summer, this rule also applies to temperature-sensitive products.
Packaging
Depending on the manufacturer, sausage and cheese specialties are supplied either vacuum-packed or traditionally without foil — for example, Italian salami from Falorni. If air is visible in a vacuum package upon delivery, this is not a quality defect. Please unpack the item and store it in the refrigerator, ideally wrapped in sausage paper or greaseproof paper.
Freight Forwarding
Freight forwarding is used for products that cannot be delivered as a package due to their size or weight. The selection is made automatically before completing the order. Please provide your phone number for scheduling the freight forwarding delivery.
Delivery Area
Currently, we only ship within Germany. Shipping to Austria is in preparation — as soon as we can deliver there, you will find the details here.
Products subject to excise duty (alcohol) cannot be shipped to Austria.
Alcohol
Alcohol can only be shipped to adults. The deliverer will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
Shipping Service
For manual creation of shipping labels, we charge an additional €2.50 per shipping label in addition to the stated shipping costs. Please note that we cannot retrospectively combine orders that have already been placed.
