Erich Stekovics dedicates himself to old varieties such as this old Swiss raspberry variety called autumn raspberry, whose raspberry bushes bear fruit twice a year. At Stekovics, they are radically pruned in spring, so that the first fruits only ripen at the end of summer on the one-year canes. They are harvested from early August until late November. This culinarily unique variety impresses with an incredible aroma and a wonderful interplay of acidity and sweetness.
