The grapes for this wine are grown on the famous Ried Ulm on the Nussberg. The soil of the very steep south-facing slope is extremely rich in calcareous shell limestone with limestone in the subsoil, and the microclimate directly on the Danube is unique. All of this gives the wine its distinctive character.
These vineyards have been managed according to biodynamic guidelines since 2008. Practicing biodynamic viticulture is not just a method, but a way of life. Fritz Wieninger sees the soil, the plants, and the entire operation as a harmonious whole, a kind of circular economy where everything is interconnected. 9 different grape varieties are carefully hand-picked at the same time with different degrees of ripeness, processed together, gently pressed after 3 hours of maceration with a pneumatic wine press, and fermented in chilled stainless steel tanks (75%) and in large, used oak barrels (25%). After almost a year of aging on the fine lees, it was bottled. The result? A wine that impresses with its complexity, structure, and balance.
