Gordal – the aperitif olives of Andalusia
The home of the Gordal olive variety is the central Andalusian provinces of Malaga, Cordoba, and Seville. It owes its name to its size, as Gordal is derived from El Gordo (the fat one). The heart-shaped giant olives have particularly fleshy pulp. Since their oil content is relatively low, they are excellent as table olives. On the palate, the Gordal olive shows a firm bite and a mild, slightly citrusy taste.
