Gordal – Andalusia's Aperitif Olives
The home of the Gordal olive variety is the central Andalusian provinces of Malaga, Cordoba, and Seville. It owes its name to its size, as Gordal is derived from El Gordo (the fat one). These heart-shaped giant olives have a particularly large amount of pulp. Since their oil content is relatively low, they are excellently suited as table olives. On the palate, the Gordal olive offers a firm bite and a mild, slightly citrusy taste.
