In the collaboration between Goodvines and RUBYcube, a true passion project for founders Jörn Walkling and Lars Lamek, de-alcoholized German Riesling meets oak-aged red wine vinegar, forming a unique, unprecedented harmony. The Riesling, whose bouquet and body are preserved through gentle de-alcoholization, provides the perfect base for this sparkling drink and brings the desired wine character to the GUUBII aperitif.

GUUBII – Goodvines meets Rubycube

The collaboration between Goodvines and Rubycube came about by chance. At joint events, Goodvines Sparkling Riesling was refined with Rubycube's elderflower vinegar creation. Its enchanting play of colors and unique taste generated enthusiastic feedback and led to the idea for the collaborative project GUUBII.

Goodvines was founded in Heidelberg in 2019 by passionate wine lovers to create a non-alcoholic wine alternative for everyone who wants to forego alcohol but not authentic taste. In the production of Goodvines Sparkling Riesling, in addition to selected, fruity-tart Rieslings from Rheinhessen or the Palatinate, state-of-the-art technologies and the expertise of experienced wine de-alcoholizers are used. During so-called vacuum distillation, the alcohol contained in the wine gently evaporates in stainless steel funnels at 30° Celsius. The initially dissolved bouquet notes, i.e., the volatile but flavor-giving substances of the wine, are collected and stored separately so that the alcohol can then completely evaporate, resulting in a final product with 0.0% alcohol. Its natural bouquet is then added back to the de-alcoholized white wine unchanged, which enables the authentic taste. To harmonize the Sparkling Riesling after de-alcoholization, it receives a so-called shipping dosage (French: liqueur d’expédition), consisting of grape must syrup, before bottling.

For Rubycube, the red wine vinegar produced by natural fermentation is infused with 11 local herbs in the Palatinate, traditionally aged in oak barrels, and refined with freshly harvested elderflowers, sun-ripened lemons, and natural cane sugar. As a result, this red wine vinegar creation is more than the sum of its parts. Rubycube manages to let all aromas blossom into a new flavor profile and create a harmonious interplay of sweetness, acidity, fruit, and spiciness.
