The Mashed Potato Spice is a spice blend with roasted onions, smoked salt, and blue fenugreek, which Ingo Holland developed together with Tim Mälzer for potato dishes. Not a neutral potato salt, no instant mash, no universal seasoning shaker.
The Mashed Potato Spice is a spice blend from Altes Gewürzamt that transforms mash, baked potatoes, and potato soup into a dish in its own right. Mashed potatoes, perhaps the simplest dish in German cuisine, have received their own special blend here. If you think that's excessive, you haven't experienced what roasted onions, smoked salt, and a dozen spices can do to a crushed potato. The side dish, which usually tastes of butter and little else, becomes a plate with depth, warmth, and a fine smoky note. The blend was developed by a Michelin-starred chef and inspired by a celebrity chef who takes potatoes more seriously than his reputation suggests.
Smoke, Roasted Onion, and a Hint of Alpine Cheese
The blend tastes warm, hearty, and slightly smoky, with sweet roasted onions in the foreground and a spicy cheese note on the finish. This note comes from blue fenugreek, an ancient alpine spice that gives Swiss herb cheese its aroma and builds a bridge to the potato here. Caraway and coriander provide a familiar, almost bready seasoning. Mace, the finely ground aril of nutmeg, enhances the earthiness of the tuber without overpowering it. The smoked salt drapes a hint of campfire over everything. Allspice and pepper add a subtle, warming spiciness in the background, which never makes the mash hot, but saves it from monotony. Together, this creates an aroma reminiscent of hearty pub cuisine, composed more precisely than it would ever be served there.
The smoky note is present but not dominant. However, those who appreciate a purist purée à la française, with only butter, milk, and nutmeg, will find the blend too rustic. It is made for robust, hearty potato cuisine, not for fine gastronomic silk.
In the tin, the blend appears coarse and varied, with visible onion pieces, whole seeds, and dark salt flakes. Upon opening, the scent of roasted onions rises first, then the smoke, and finally a faint caraway note. This triad alone reveals where the journey leads: into hearty, warming cuisine, not delicate artistry.
Mash is Just the Beginning
The blend seasons everything made from potatoes, from mash to fried potatoes to soup. For classic mash, cook predominantly waxy potatoes in salted water, add butter or olive oil, and roughly crush everything with a fork. Then sprinkle half a teaspoon of the spice blend over it, fold it in, let it steep briefly, then taste. Brush baked potatoes with oil and a pinch of the blend before baking. In potato soup, a teaspoon replaces the usual smoked bacon foundation, making it interesting for vegetarian cuisine too. Fried potatoes get their seasoning in the last minute, along with a knob of butter.
The choice of potato variety determines the texture. Predominantly waxy varieties like Laura or Belana yield a chunky mash with bite, to which the coarse spice pieces adhere. Floury varieties disintegrate more finely, absorbing the seasoning more evenly, resulting in a creamier and milder outcome. For the full effect of the blend, we recommend the chunky version. Another recipe idea: Foam up brown butter, stir in half a teaspoon of the seasoning, and drizzle it over the finished mash. The nuttiness of the butter significantly enhances the roasted onion note.
Beyond potatoes, the principle also works: sweet potatoes, pumpkin purée, and parsnips all tolerate the smoky roasted onion note equally well. For fries and wedges, you might prefer the Seasoning Salt for Fried Foods from the same manufacturer, and for vegetable stir-fries, the Vegetable Seasoning.
Good to know: The blend already contains salt, including smoked salt. Be careful when re-salting; taste at the very end. Used sparingly, the tin will last for many weeks, because without anti-caking agents, the preparation is more concentrated than commercial shakers. Store it in a dark, dry place, and the roasted onions will remain crispy and the aroma stable for months. Sprinkled directly over a steaming pot, however, the blend will absorb moisture and clump over time. It's better to use a dry spoon to take it out.
Two Chefs, One Tuber
The Mashed Potato Spice was created in collaboration between Ingo Holland and Tim Mälzer, two chefs who could not be more different. Here, the Franconian Michelin-starred chef who ran his restaurant with a Michelin star and 18 Gault-Millau points before dedicating himself entirely to his spice manufactory in Klingenberg in 2007. There, the Hamburg celebrity chef who has made honest everyday cooking his brand. Both met over the potato, a product that is on the table daily in German kitchens and yet rarely taken seriously.
The blend bears the signature of both. From Mälzer comes the uncomplicated demand that a dish should be improved without effort. From Holland comes the precision in the composition; each of the ten or so ingredients has a purpose. Roasted onions bring sweetness, smoked salt brings depth, blue fenugreek brings recognizability. Since Holland's death in 2022, his son Kilian has continued the manufactory on the Main. We have been stocking the Klingenberg spices since 2009 and have had mash with this blend on our table more often than we'd like to admit.
The blue fenugreek, in particular, deserves a second look. This inconspicuous herb, also known as bread clover, has grown in the Alpine region for centuries, where it seasons cheese and farmer's bread. In South Tyrol, it's an ingredient in Vinschgerl bread, and in Switzerland, in green Ziger cheese. That it gives a potato blend its distinctive character is an idea that you only understand once you've tasted both together. It was precisely such cross-connections that made Holland a sought-after spice developer for colleagues in top gastronomy.
From Side Dish to Main Star
What distinguishes this spice preparation from other potato seasonings is its direction. Most products in this category are salt blends with a little paprika, intended as a sprinkler seasoning over the finished dish. Here, however, a composition was developed for a specific dish, with roasted onions as the core flavor carrier instead of an alibi ingredient. As a gift for a rustic dinner, the tin makes more of an impression than a bottle of wine. If you want to delight a potato lover, you're rarely wrong here. A gift with a built-in recipe, as the preparation is clearly stated in three sentences. The blend also proves its worth at a barbecue buffet, sprinkled over foil-wrapped potatoes, alongside quark and herb butter. There, it incidentally answers the question of why the potatoes were so good this time.
Bring the mash back to the center of the plate, where it belongs with this seasoning.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as genussland.de. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

Our assortment includes fine foods, delicacies, wines, non-alcoholic beverages, and selected kitchen and home accessories — from manufacturers in Germany, Austria, Italy, France, Portugal, Spain, England, Iceland, Denmark, Sweden, Greece, and the USA.
An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.
The people behind the products
What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

Refrigerated Shipping
Our product range includes food items that react differently to heat. To ensure that every product arrives in perfect condition, we handle the shipping of two product groups with particular care.
Products requiring refrigeration
These items are marked with the note "kühlpflichtig" (requires refrigeration) in our shop — for example, Bordier butter, Parmigiano Reggiano from Cavola 993, Pancetta and Guanciale from Falorni, mountain herb ham and Tyrolean dumplings from Steiner, Prosciutto Crudo and truffle butter from Viani. We generally ship these products by express delivery with ice packs. They are only available via express shipping. The shipping costs will be clearly displayed before you complete your order at checkout.
Temperature-sensitive products
These items are marked with the note "temperaturempfindlich" (temperature-sensitive) — for example, salami and bacon specialties from Falorni and Steiner, as well as Goufrais cocoa confectionery. In cooler weather, they can be sent by standard shipping. In warmer weather, we switch the shipping to express shipping with ice packs before checkout — in this case, this shipping method is the only option, and the corresponding shipping costs will be displayed at checkout.
Shipping days for refrigerated and temperature-sensitive orders
To prevent any package from remaining in a distribution center over the weekend or public holidays, we only ship refrigerated orders from Monday to Thursday. Orders placed after Thursday will generally not be shipped until the following Monday. In summer, this rule also applies to temperature-sensitive products.
Packaging
Depending on the manufacturer, sausage and cheese specialties are supplied either vacuum-packed or traditionally without foil — for example, Italian salami from Falorni. If air is visible in a vacuum package upon delivery, this is not a quality defect. Please unpack the item and store it in the refrigerator, ideally wrapped in sausage paper or greaseproof paper.
Freight Forwarding
Freight forwarding is used for products that cannot be delivered as a package due to their size or weight. The selection is made automatically before completing the order. Please provide your phone number for scheduling the freight forwarding delivery.
Delivery Area
Currently, we only ship within Germany. Shipping to Austria is in preparation — as soon as we can deliver there, you will find the details here.
Products subject to excise duty (alcohol) cannot be shipped to Austria.
Alcohol
Alcohol can only be shipped to adults. The deliverer will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
Shipping Service
For manual creation of shipping labels, we charge an additional €2.50 per shipping label in addition to the stated shipping costs. Please note that we cannot retrospectively combine orders that have already been placed.
