Lovely Morning Tea – for Mate Fans

We've lost count of the mate tea fans! The tea plant – its actual name is "yerba maté" (maté refers to the gourd in which the tea is drunk) comes from the holly family, which only grows in South America. Argentinians, for example, drink mate tea all day long following an unchanging ritual: The yerba mate plant is placed in the "maté", then sugar, honey, or spices are added, a small cavity is made in the mixture, into which the "Bombilla" (a small cylinder that serves as both straw and filter) is inserted, and everything is infused with hot water. Then the tea is left to steep and is drunk! Preferably shared with others.

• 3-4 minutes steeping time
