Sardinencreme Tomate Kapern ist ein Aufstrich aus Sardinenfilets, nativem Olivenöl extra, Tomate und ganzen Kapern, den la belle-iloise in Quiberon herstellt. Keine glatte Fischpaste, keine Tomatensauce, keine Tapenade und kein Aufstrich für Gäste, die Kapern als zu salzig empfinden.
Sardinencreme Tomate Kapern ist die zweite der beiden Sardinaden von la belle-iloise, neben der Variante mit zwei Oliven. Wer beide kennt, ordnet sie schnell ein: Die Olivencreme ist herb und dunkel, diese hier fruchtig und hell. Die Tomate gibt ihr Farbe und eine milde Süße, die Kapern setzen salzige Punkte hinein. Sie ist die zugänglichere der beiden, ohne dabei brav zu werden, denn die Kapern sorgen für Kontur.
Fruchtig im Grund, salzig in Punkten
Eine Sardinencreme mit Tomate und Kapern schmeckt zuerst rund und fruchtig, dann kommen einzelne salzige Spitzen, die von den ganzen Kapern stammen. Die Tomate steht im Vordergrund, in Stücken und als Konzentrat, und macht die Creme weicher und süßer als eine reine Fischpaste.
Die Kapern werden nicht püriert, sondern bleiben ganz. Beim Zerbeißen geben sie einen Schub konzentrierter Salzigkeit ab, der kurz aufblitzt und wieder verschwindet. Dieses Wechselspiel aus weicher Masse und festen Punkten macht den Reiz der Dose aus.
Knoblauch und Zwiebel würzen im Hintergrund, etwas Hefeextrakt vertieft den herzhaften Ton, und das native Olivenöl extra bringt eine grasige Note. Die Sardine selbst ist salzig und kräftig, aber durch die Tomate deutlich gezähmt. Die Farbe ist ein warmes Rosa mit dunklen Sprenkeln.
Im Mund ist die Creme weich, aber nicht glatt. Kleine Tomatenstücke und die Kapern geben ihr eine Struktur, die an eine grobe Rillette erinnert. Der Abgang ist mittellang, mit Tomatensüße und einer salzigen Spur, die nach einem Schluck Wein verlangt.
Wer eine kräftige, fischbetonte Creme erwartet, wird diese Dose als zu mild empfinden. Für Menschen, die Kapern nicht mögen, ist sie nicht geeignet, denn die Knospen lassen sich nicht herauslesen, ohne die Creme zu zerstören.
Auf Crostini, in Pasta, auf dem Frühstückstisch
Die Creme gehört auf dünn geröstetes Weißbrot, wo ihre Tomatensüße mit der Röstnote des Brotes zusammenkommt. Streichen Sie sie auf acht Crostini, legen Sie je ein Basilikumblatt darauf und geben Sie einen Tropfen Olivenöl darüber. Das ist ein Aperitif für vier Personen, der drei Minuten Arbeit kostet und keine Küche braucht.
Für eine schnelle Pasta rühren Sie den Inhalt einer Dose mit zwei Löffeln Nudelwasser glatt und heben 200 Gramm heiße Spaghetti unter. Die Kapern bleiben als Salzpunkte erhalten, Parmesan brauchen Sie nicht. Das ergibt zwei Portionen in zehn Minuten.
Auf dem Frühstückstisch am Wochenende ersetzt die Dose Lachs und Frischkäse zugleich. Ein Löffel auf ein halbes Brötchen, ein paar Gurkenscheiben und grober Pfeffer darüber. Neben einem weichen Ei ist das ein Frühstück, das nach Urlaub schmeckt, und die Dose reicht für zwei Personen.
Zu einer Platte mit Radieschen, Fenchelstreifen und Selleriestangen wird die Creme zum Dip, der ohne Sahne und Mayonnaise auskommt. Eine Dose reicht für vier Personen als Vorspeise, wenn Brot und Gemüse dazustehen.
Auch als Füllung für Cocktailtomaten oder als Dip zu Grissini funktioniert die Creme. In warmen Saucen mit langer Garzeit ist sie dagegen fehl am Platz, weil das Eigelb bindet und bei Hitze körnig wird. Wer eine Fischcreme mit Kräuternote sucht, findet sie in der Lachscreme mit Estragon.
Gut zu wissen: Öffnen Sie die Dose eine Viertelstunde vor dem Essen und rühren Sie die Creme einmal durch. Beim Lagern setzt sich Öl an der Oberfläche ab, das nach dem Umrühren die Creme geschmeidiger macht. Kalt direkt aus dem Kühlschrank schmeckt die Tomate flacher.
Warum die Kaper erst zum Schluss dazukommt
Der Kapernstrauch wächst wild an Mauern und Felsen rund um das Mittelmeer, und geerntet werden seine Blütenknospen, bevor sie aufgehen. Roh sind sie ungenießbar, ihr Aroma entsteht erst in der Salzlake, in der sich über Wochen Senfölglykoside abbauen und die typische, leicht scharfe Würze zurückbleibt.
Bei der Herstellung dieser Creme werden die Kapern getrennt von der übrigen Masse behandelt. Sardine, Tomate und Öl werden zuerst zu einer homogenen Basis gerührt, und die Knospen werden im letzten Arbeitsschritt untergehoben, damit sie ganz bleiben. Würde man sie mitpürieren, hätte die Creme zwar dieselbe Salzigkeit, aber keine Punkte mehr, nur einen gleichmäßigen Ton.
La belle-iloise nennt seine Sardinenaufstriche Sardinaden, ein hauseigener Name für eine eigene Produktgruppe, die neben den Dosen mit ganzen Fischen steht. Beide Sardinaden entstehen aus denselben Sardinen, die auch in den klassischen Ölsardinen des Hauses liegen. Die Sardinen dafür werden im Haus in Quiberon verarbeitet, gegart und filetiert, bevor sie mit Olivenöl, Tomate, Knoblauch, Zwiebeln und Eigelb zur Creme gerührt werden. Maniokstärke sorgt dafür, dass die Masse auf dem Brot bleibt.
Die verschlossene Dose wird anschließend sterilisiert. Dieser Schritt macht die Creme ohne Kühlung mehrere Jahre haltbar und gart das Eigelb, das die Masse bindet. Die Tomate verliert dabei etwas Frische, gewinnt aber an Tiefe, ähnlich wie eine lange geschmorte Sauce. Danach verändert sich die Creme kaum noch, anders als eine ganze Sardine, die im Öl weiterreift.
Die Dose für den Tisch voller kleiner Schalen
Innerhalb der Fischcremes von la belle-iloise ist die Sardinencreme Tomate Kapern die fruchtigste und die kinderfreundlichste, sofern die Kapern akzeptiert werden. Sie eignet sich für Aperitifs, Brunchtafeln und alle Gelegenheiten, bei denen viele kleine Dinge nebeneinanderstehen.
Für Menschen, die Fisch aus der Dose mit Vorbehalt betrachten, ist diese Creme ein sanfter Einstieg. Die Tomate nimmt dem Sardinengeschmack die Schärfe, ohne ihn zu verstecken, und die vertraute Form des Aufstrichs senkt die Schwelle.
Als Geschenk passt sie in ein Paket mit der Olivenvariante, denn beide zusammen zeigen, wie unterschiedlich zwei Cremes aus derselben Sardine schmecken können. Zum Glas gehört ein Rosé oder ein leichter Weißwein, etwa ein Vermentino, dessen Frucht die Tomate aufnimmt.
Mit 60 Gramm ist die Dose für einen Abend zu zweit oder einen Aperitif zu viert gedacht. Geöffnet hält der Rest abgedeckt im Kühlschrank bis zum nächsten Tag, verschlossen lagert die Dose mehrere Jahre im Schrank und ist damit der einfachste Vorrat für unangekündigten Besuch.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as genussland.de. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

Refrigerated Shipping
Our product range includes food items that react differently to heat. To ensure that every product arrives in perfect condition, we handle the shipping of two product groups with particular care.
Products requiring refrigeration
These items are marked with the note "kühlpflichtig" (requires refrigeration) in our shop — for example, Bordier butter, Parmigiano Reggiano from Cavola 993, Pancetta and Guanciale from Falorni, mountain herb ham and Tyrolean dumplings from Steiner, Prosciutto Crudo and truffle butter from Viani. We generally ship these products by express delivery with ice packs. They are only available via express shipping. The shipping costs will be clearly displayed before you complete your order at checkout.
Temperature-sensitive products
These items are marked with the note "temperaturempfindlich" (temperature-sensitive) — for example, salami and bacon specialties from Falorni and Steiner, as well as Goufrais cocoa confectionery. In cooler weather, they can be sent by standard shipping. In warmer weather, we switch the shipping to express shipping with ice packs before checkout — in this case, this shipping method is the only option, and the corresponding shipping costs will be displayed at checkout.
Shipping days for refrigerated and temperature-sensitive orders
To prevent any package from remaining in a distribution center over the weekend or public holidays, we only ship refrigerated orders from Monday to Thursday. Orders placed after Thursday will generally not be shipped until the following Monday. In summer, this rule also applies to temperature-sensitive products.
Packaging
Depending on the manufacturer, sausage and cheese specialties are supplied either vacuum-packed or traditionally without foil — for example, Italian salami from Falorni. If air is visible in a vacuum package upon delivery, this is not a quality defect. Please unpack the item and store it in the refrigerator, ideally wrapped in sausage paper or greaseproof paper.
Freight Forwarding
Freight forwarding is used for products that cannot be delivered as a package due to their size or weight. The selection is made automatically before completing the order. Please provide your phone number for scheduling the freight forwarding delivery.
Delivery Area
Currently, we only ship within Germany. Shipping to Austria is in preparation — as soon as we can deliver there, you will find the details here.
Products subject to excise duty (alcohol) cannot be shipped to Austria.
Alcohol
Alcohol can only be shipped to adults. The deliverer will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
Shipping Service
For manual creation of shipping labels, we charge an additional €2.50 per shipping label in addition to the stated shipping costs. Please note that we cannot retrospectively combine orders that have already been placed.
