Sauerkraut from South Tyrol – Bring the Mountains Home

The sauerkraut from South Tyrol by Metzgerei Steiner is a true specialty made according to a traditional family recipe. Metzgerei Steiner's sauerkraut comes from the only sauerkraut producer in South Tyrol, the Lechner family from Laas.

Here, the sauerkraut, affectionately called Crauti, has been traditionally handcrafted for three generations. The Lechner family grows white cabbage in their own fields, which is harvested between mid-August and mid-November. The cabbage is freshly cleaned, cored, and finely shredded before being stomped with feet to initiate lactic acid fermentation. For this natural process, the cabbage is sealed airtight and weighted down. Just as if you were making sauerkraut at home in a fermentation jar with a weight. The key now is the correct ripening time, which depends, among other things, on the temperature and can take up to six weeks. In any case, there must be enough sauerkraut available for Törggele season, because nothing goes without sauerkraut from South Tyrol during Törggelen.

The Kobiskraut or Rübenkraut, as sauerkraut is also called in South Tyrol, is properly sour. If you prefer it a little milder, grate a sweet apple into it. In Southern Germany, it is delicately seasoned with caraway seeds; in the North, we like it with bay leaf and juniper – all three spices were used for Steiner's Crauti. If you like, you can also fry some onions in butter and add the onions and broth to the cabbage.
