Ooni Dough Tool Set is a three-piece basic set for home dough preparation, developed by the Scottish pizza brand Ooni. No bladed or piercing accessories, no machine-powered tools, no wooden dough scrapers.

The Ooni Dough Tool Set bundles the three hand tools a dough handler truly needs on the countertop: a flexible dough scraper, a sturdy easy-lift dough lifter, and a dough-mixing spatula for the bowl. Together, they cover the journey from the initial mixing in the bowl to portioning and placing the dough balls. Laying the three tools side by side on a floured countertop reveals the logic: each tool has a task that the other two cannot do better.

Three tools, three tasks

The flexible dough scraper, made of food-grade plastic, is the tool for scraping dough residue from the bowl and keeping the countertop clean between dough batches. Its rounded side shapes dough balls during pre-portioning, while the straight side portions cleanly. The Easy-Lift Dough Lifter is the thicker, sturdier tool: it lifts the kneaded dough out of the bowl without tearing the gluten network with your hands. The Dough-Mix Spatula, in turn, is a narrow, long spatula used to mix the initial flour-and-water mixtures in a tall bowl before the dough develops structure.

All three tools are dishwasher safe. The material selection is designed for durable use: dough-soaked surfaces do not affect the material, and it withstands heat up to normal dishwasher temperatures.

How the set is used for pizza dough

On pizza night, the sequence is as follows: Use the dough-mix spatula to pre-mix flour and water in the bowl until a crumbly pre-dough forms. Let it rest, add salt, then yeast. After the kneading phase, lift the dough with the easy-lift lifter into a second, oiled bowl. Let it rest, tip it out again, divide. Use the dough scraper to lift the pre-proofed dough balls from the countertop and place them into proofing baskets. Three tools, three phases, without having to wash floury hands in between.

From experience: The dough-mix spatula is often underestimated. Those who mix their dough entirely with a wooden spoon or a stand mixer won't immediately notice the difference. But for high-hydration doughs (70+ percent water content), the mixing spatula elevates the first two minutes of mixing to a different level — less clumping, more uniform structure before kneading begins.

First limitation: For professional bakery quantities exceeding 5 kilograms of dough, the tools are too small. The Easy-Lift Lifter reliably lifts 1.5 kilograms of dough; a 5-kilogram dough ball requires two hands and more robust tools.

Second limitation: The tools are made of plastic. Those expecting a stainless steel set will find the material choice a compromise. However, for pizza dough, plastic is ideal: it doesn't affect the gluten and can be cleaned completely smooth, whereas stainless steel edges can accumulate small dough residues over time.

Ooni ist eine schottische Pizzaofen-Marke, 2012 in Edinburgh vom Finnen Kristian Tapaninaho und seiner Frau Darina Garland gegründet. Am Anfang stand ein Frust, kein Businessplan: Der Haushaltsbackofen schaffte keine echte Pizza napoletana, die teuren gemauerten Gartenöfen waren unerschwinglich und unbeweglich. Zwischen beidem klaffte eine Lücke, und die schlossen die beiden mit ihrem ersten Ofen-Prototyp, der 2012 als „Uuni 2" über Kickstarter angeboten wurde. Die Kampagne übertraf alle Erwartungen. Aus dem Prototyp wurde ein Unternehmen, aus dem Unternehmen die heute bekannteste Marke für kompakte Outdoor-Pizzaöfen im Heimbereich.

Das Sortiment teilt sich in fünf Familien. Die Koda-Öfen laufen mit Propangas, zünden per Knopfdruck, heizen in 20 Minuten auf 500 Grad. Die Karu-Reihe ist Multi-Fuel — Holz, Holzkohle, optional Gas — und liefert den typischen Rauchgeschmack einer Holzfeuer-Pizza. Der Fyra 12 ist der kompakte Holzpellet-Ofen, ideal für den mobilen Einsatz. Die Volt-Linie (Volt 12, Volt 2) ist elektrisch und darf als einzige Ooni-Serie auch in Innenräumen betrieben werden; der Volt 2 wurde 2025 in die Oprah's Favorite Things-Liste aufgenommen.
