Papa Anzóis Sardines in Tomato Sauce. Mild sauce with oregano, serve hot or cold.

Papa Anzóis Sardines in Tomato Sauce are Atlantic sardines in a mild sauce made with tomato and onion, oregano, extra virgin olive oil and a splash of vinegar. No spicy version, no sardines in oil, no bread spread.

These sardines in tomato sauce come from Parchal on the Algarve. There, Papa Anzóis produces them as an artisanal canned dish. Just under two-thirds of the contents are fish. The rest is a sauce that tastes like home cooking rather than a tin. When heated, it smells much more strongly of oregano than when cold. This turns a tin into a warm dinner in just a few minutes. Especially on days when there is no time to cook, it is a reliable staple to keep in the pantry.

Tomato, onion, oregano and a touch of acidity

The sauce of the Nº 07 is mild and well-rounded. Fruity tomato is the main feature and makes up 22 percent of the contents. Onion gives it a gentle sweetness, while oregano adds an herbal, slightly peppery spice. The vinegar keeps everything fresh so that the tomato does not taste heavy. The sardine inside is juicy and robust enough to stand up to the sauce.

Because the vinegar contains sulfites, the tin is not suitable for people who must avoid sulfites. The same applies to those with a fish allergy. Anyone expecting heat will be disappointed, as chili is deliberately omitted. For that, there are the spicy sardines with chili.

Hot on toast, with potatoes or with egg

The tomato sauce is best enjoyed when gently heated. Pour the contents into a small saucepan and let it simmer on low heat for about three minutes. The sauce should not boil, otherwise the fish will break apart.

  • Sardine toast: Toast two slices of sourdough bread, spread thinly with butter and top with the warm sardines and sauce. Smooth parsley and black pepper are all you need.
  • With potatoes: Peel 500 g of new potatoes, roughly mash them and season with olive oil and salt. Spoon the warm sardines and sauce over the top, served with a green salad.
  • With egg: Heat the sauce in a small frying pan, crack in two eggs and let them set with the lid on. Arrange the fish around the eggs and eat with bread straight from the pan.

One final detail: A 120 g tin is enough for one person as a main course or for two as a starter. Cold straight from the tin, the sauce tastes more restrained, but by no means flat. Anyone looking for pure sardines in oil will not be well served by this variety, as the tomato defines every bite.

From Petiscada to Tins on the Arade River

Conserveira do Arade has been processing sardines and tomatoes for longer than the Papa Anzóis brand has existed. Before the first tin went on sale in 2021, the company filled so-called petiscadas in jars under the name Saboreal. This refers to shredded fish mixed with vegetables and regional spices, including sardines with cooked-in tomato.

The Conserveira was founded in 2015 in Parchal by two partners, Manuel Mendes and Vincent Jonckheere. Their goal was to bring canning back to the Arade River, where many factories operated until the end of the 20th century. Today, a young team packs the sardines by hand. In addition to the fish, the company preferably sources its ingredients from producers in the surrounding area. During a holiday in the region, the factory can be visited on weekdays by appointment, with a tasting included.

The mild Nº 07 for tomato lovers

Papa Anzóis offers two versions of this variety: a mild one and a spicy one with malagueta chili. This tin is the mild one, packaged in colored paper with the Nº 07. This makes it suitable for a table where not all guests like heat. The company describes each of its tins as artesanal, meaning handmade. Together with two sardines in oil from the brand, it makes a small tasting set for guests.

According to the manufacturer, the unopened tin keeps for four years. Store it in a cool, dry place at room temperature, away from sunlight. The Papa Anzóis collection shows the brand's complete range, while other tins from the country are available under Sardines from Portugal.

A tin that becomes a warm dinner in three minutes in a saucepan, with enough sauce to dip bread into.
