Sherry Vinegar from Capirete – Vinagre de Jerez
The Sherry Vinegar from Capirete is a Vinagre de Jerez, which is produced in the Sherry Triangle of Spain using traditional methods and aged in wooden barrels. This wine vinegar from Sherry is young and strong in taste; its acidic nature harmonises wonderfully with fresh salads and raw vegetables. However, sauces and soups also benefit from a splash of this aromatic Sherry vinegar from Andalusia.
Sherry Vinegar – Vinagre de Jerez DOP
Sherry vinegar, Vinagre de Jerez, is a wine vinegar made from Sherry. It is produced in the Spanish province of Cádiz and in the so-called Sherry Triangle between Jerez de la Frontera and the towns of Sanlúcar de Barrameda and El Puerto de Santa María.
To be called Vinagre de Jerez, Sherry vinegar must mature for at least six months in oak barrels within the Sherry Triangle and must have an acidity of at least 7 degrees. Most Sherry vinegars, like Sherry wine, mature in the Solera system. Production and quality are monitored by the Consejo Regulador. Thus, Vinagre de Jerez is a product with protected designation of origin and carries a DOP, Denominación de Origen, which is protected by EU law.
