Light Miele di Acacia from Black Locust Blossoms from Terre Roveresche

Miele di Acacia from Azienda Guerrieri is a light acacia honey from the Marche region, harvested from black locust blossoms in spring. Mild, delicately floral, almost clear in the glass. Not a wildflower blend like the Millefiori from the same house, but a single varietal that isn't successful every year.

Miele di Acacia from Azienda Guerrieri is an Italian acacia honey from Terre Roveresche in the Marche region, harvested from the black locust trees along the Metauro River. Botanically, it comes from the black locust (Robinia pseudoacacia), which blooms white in May – beekeepers therefore also call it black locust honey. Unlike the more robust wildflower honey, this acacia honey is light, almost water-clear, with a delicate, floral sweetness.

Light as Amber, Delicate in Sweetness

In the glass, Miele di Acacia displays a pale gold, almost translucent. On the palate, it is delicate, floral, and fragrant all at once, with hardly any bitterness, and none of the spiciness of forest honey.

A hint of vanilla resonates, sometimes a subtle aroma of the acacia blossom itself – delicate, floral, never overpowering. Characteristic of acacia honey: it remains liquid for an exceptionally long time, often over a year, because the high fructose content delays crystallization. In a spoon, Miele di Acacia therefore flows like liquid amber light, while the Millefiori from the same house usually solidifies more quickly.

On Warm Flatbread, with Mild Goat Cheese

The mild character makes this acacia honey a partner for delicate flavors that a more robust honey would overpower. It doesn't impose itself.

Pure on lukewarm flatbread with butter, it reveals itself most purely, without competition. With young fresh goat cheese or creamy Robiola, a subtle contrast arises between milky acidity and floral sweetness – a combination for which restrained honey varieties are made. From Azienda Guerrieri's product range, a glass of Bianchello del Metauro pairs well with it, still or as an aperitivo starter.

Its restraint also pays off in the kitchen: in a dressing with lemon and olive oil, as a sweetener in a light vinaigrette for arugula and Parmesan, or as the final drizzle on warm burrata with black pepper.

Five Generations on the Banks of the Metauro

Since 1800, the Guerrieri family has managed their estate in Terre Roveresche near Pesaro – now in its fifth and sixth generations.

Luca Guerrieri runs the farm together with his children Maria Giulia and Alberto, spanning 207 hectares between vineyards, olive groves, and natural meadows along the Metauro. Bees are the only animals kept on the farm – "free animals that function as environmental thermometers," as Luca describes them. Not every year do the black locust trees bloom strongly enough for a single varietal honey; in some years, it remains only Millefiori, and Miele di Acacia is simply not produced.

Around 40 permanent employees keep the business running throughout the year, some already in their second generation alongside the family. Harvesting, centrifuging, and bottling are done by hand into 250-gram jars, "because to cultivate the land, you have to know the past," is the Guerrieri motto – a motto that also applies to their natural bee pastures. Since 1996, the farm has also been registered as a teaching farm in the region. Little fuss, lots of handwork.

Serving Suggestion

If you store Miele di Acacia in a dark, dry place at room temperature, it will remain spreadably liquid in its 250g jar for months – a spoonful is enough for tea, breakfast, or the final sweetness in a vinaigrette. Should it crystallize, a water bath at no more than 40 degrees Celsius for 5 to 10 minutes will make it flow again. Tasted side-by-side, the Miele di Acacia and the spicier Miele Millefiori from the same producer show how differently two honey varieties from the same landscape can taste.
