Grilling Food Holder. Six brackets so the fat drips off.
The grilling food holder is a 30-centimeter long stainless steel frame with six holding brackets that stands grilled food upright. No skewer, no grate, not limited to Thüros.
The grilling food holder is 30 centimeters long, has six brackets, and fits on any grill grate. Bacon and ribs lie flat in their own fat. What drips off below stays there, softens the crust, and turns crispiness into a matter of definition.
What changes when upright
The holder positions meat cuts vertically between its brackets. The fat runs off the surface instead of collecting under the piece.
The effect is most noticeable with fatty cuts: bacon, ribs, neck steaks. The crust remains firm, the meat doesn't stew in its own juices, and the surface browns evenly all around.
Also for post-treatment
The holder doesn't have to be in use during grilling. It also works afterwards.
From experience: After grilling, place bacon or neck steaks upright in the holder for two to three minutes while they rest. The fat drips off, the crust tightens, and the meat still remains juicy. The holder is not suitable for delicate pieces like fish; they would fall apart.
Six brackets, 30 centimeters
The six brackets accommodate six larger or several smaller pieces. At 30 centimeters long, the holder fits horizontally on almost any grill grate.
The material used is non-magnetic V2A stainless steel. After grilling, the holder goes into the dishwasher — for a part where fat sits in narrow spaces, this is the crucial point.
Not just for Thüros
The holder doesn't require a specific grill, just a grate. It works on charcoal, gas, and in the oven.
One limitation: very thick pieces do not fit between the brackets. Ribs in one piece and bacon slices yes, a whole pork belly no.
The fat belongs below, not under the meat.
