The stainless steel wok is an uncoated wok pan with a 35-centimeter diameter and a wooden handle, designed for use over charcoal. No coating, no induction base, not a pan for the stove.
The stainless steel wok has a 35-centimeter diameter and is adapted for Thüros grills. A wok on a kitchen stove is always a compromise. The burner only heats the bottom, the sides remain cool, and this is precisely where the technique for which the wok was built fails.
Why uncoated is right
Wok cooking means very short cooking at very high heat. Coatings cannot withstand this; they decompose above about 260 degrees Celsius.
Uncoated stainless steel does not have this limit. It can withstand the full heat of the coals, and over time, a patina forms that reduces sticking. The trade-off: In the first few weeks, more will stick than with a coated pan.
What works in a wok
Strips of meat, vegetables cut into equal pieces, noodles, rice. Anything that should be ready in two to four minutes.
From experience: Heat the empty wok until a drop of water dances on it like a ball, and only then add the oil. Oil heated with a cold wok will burn on instead of separating. The wok is not suitable for slow simmering — it lacks the mass to store heat.
Wooden handle that does not get hot
The handle is made of wood and remains graspable, even when the wok is over the coals. With a continuous stainless steel handle, you would need a cloth.
One restriction follows from this: The wok does not belong in the dishwasher or the oven. Wood tolerates neither well. Washed by hand and wiped dry, it will last for decades.
On the grill instead of in the kitchen
The wok is designed for coals, not for the stovetop. On an electric stove, its round bottom makes it unstable and it only heats at one point.
On the Thüros grill, it sits in the wok ring grate insert, which lowers it and holds it securely. Without this insert, it would wobble on the grate.
The pan for which a charcoal grill is the better stovetop.
