Grauer Burgunder 2023 – Organic Wine from Wittmann
The Wittmann Grauer Burgunder 2023 from Weingut Wittmann impresses with its delicate spice and enormous drinkability. The 2023 Grauburgunder Gutswein remained on the fine lees for a long time and was mostly aged in large wooden barrels. This creates a Burgundy with a creamy melt and rather subtle fruit; alongside aromas of apples and pears, the Wittmann Grauburgunder also exhibits nutty notes and those of brioche, as well as a delicate herbal spice in the finish.

The estate wines are the calling card of the winery, which is why elegance and a delicate expression of origin are particularly important to us in these wines. The grapes come from the winery's own vineyards, which are farmed biodynamically and meticulously cared for. They are ideal food companions, and not just in their first year.
Weingut Wittmann – how wine is made
The Grauburgunder grapes grow on the gentle hills surrounding Weingut Wittmann in Westhofen in Rheinhessen. The vineyards are cultivated biodynamically, which means not only refraining from chemical-synthetic agents but, above all, activating soil life and mindfulness in the daily walk through the vine rows. "Every contact is a dialogue," Philipp Wittmann sums it up. This means intensive vineyard care throughout the year, low yields, and consistent manual selection of the grapes form the basis for the high wine quality.
After manual harvesting, the grapes are gently pressed and the must is guided into the cellar solely by gravity, without pumping. There, it has time to ferment spontaneously in traditional wooden barrels and remains on the fine lees for a long time, which gives the wine structure. In the end, much tasting and blending takes place, because each wooden barrel contains only the must from a few rows of vines, until the perfect balance is found. Winemaking is a matter of the head with heart.
