Wittmann – Silvaner Natural – Natural Wine from Rheinhessen

The Wittmann Silvaner Natural 2021 from Weingut Wittmann is a natural wine, a beautiful, not truly wild Vin Naturel. A lovely wine for all those who simply want to try such a wine, which may "only" be called a country wine, and get to know new taste worlds. And it's worth it: the Wittmann Silvaner Riesling Natural is clean, without off-notes or volatile acidity, so no courage is needed to uncork the bottle.

The Silvaner Riesling Natural is slightly cloudy, a bit like naturally cloudy apple juice, it smells like warm yeast cake with ripe apple, raisins and cinnamon, it positively invites you to drink, on the palate it surprises with an elegant, fine tannin structure and well-integrated acidity, it shows quince, a hint of smoke and a fine wild herb aroma.

Unfortunately, the quantity of the 2021 vintage is very limited, so we can only supply 6 bottles per customer.

Weingut Wittmann – how this wine is made

The Silvaner and Riesling grapes grow on the gentle hills around Weingut Wittmann in Westhofen in Rheinhessen. The vineyards are cultivated biodynamically. The use of chemical-synthetic pesticides, as well as mineral fertilizers and herbicides, is avoided, and the use of natural biodynamic preparations is obligatory at Weingut Wittmann. The entire viticulture and cellar management follow this ideal. For all other wines, hand harvesting in the vineyard is followed by traditional processing and wine aging in the old Wittmann cellar vaults. Intensive vineyard care throughout the year, low yields, and consistent hand selection of the grapes also form the basis for the high wine quality here. The grapes were harvested ripe, but not too ripe, so that with 10% vol. alcohol, the wine can show a beautiful lightness.

Silvaner natural – fermented on the skins

With this wine, Philipp Wittmann consciously takes a different path after the harvest: a wine that follows the ideal of Orange or Natural Wine. The grapes were destemmed by hand individually and then fermented on the skins for 10 days. The free-run juice, i.e., the must without any pressing, was drawn off after fermentation and further aged in a half-stück cask for 8 months. Bottling was unfiltered, unfined, and unsulphured, without any further intervention or additives. No sulfites were added during the entire aging period.

Philipp Wittmann erzeugt puristische, klare und trockene Rieslinge sowie Burgunder, die vom kalkreichen Terroir des Wonnegaus geprägt sind.
