Weingut Wittmann – how wine is made
The Riesling grapes grow on the gentle hills around Weingut Wittmann in Westhofen in Rheinhessen. The vineyards are cultivated biodynamically, which not only means abstaining from chemical-synthetic agents but, above all, activating soil life and mindfulness during the daily walks through the rows of vines. "Every contact is a dialogue," Philipp Wittmann puts it succinctly. This means intensive vineyard care throughout the year, low yields, and consistent hand selection of the grapes form the basis for the high quality of the wine.
After manual harvesting, the grapes are gently pressed, and the must is guided into the cellar by gravity alone, without pumping. There, in traditional wooden barrels, it has time to ferment spontaneously and remains on the fine lees for a long time, which gives the wine structure. In the end, much is tasted and blended together, because each wooden barrel contains only the must from a few rows of vines, until the perfect balance is found. Winemaking is a matter of the head with heart.
