Königskind Chimichurri, the green barbecue sauce made from parsley, garlic, and lime

Königskind Chimichurri is an Argentinian herb sauce made from crisp parsley, sunflower oil, onions, lime juice, garlic, and spices. It's a classic green "Verde" variety with lime juice instead of red wine vinegar, giving it a lively, zesty flavor. This puristic grilling companion from the Oberbergisches Land comes in a 155g jar.

Chimichurri is a classic Argentinian herb sauce, traditionally served with Asado – the South American barbecue – since the 19th century. Königskind, from the Oberbergisches Land, handcrafts this sauce according to the original recipe. The classic Chimichurri Verde thrives on the aroma of parsley, here combined with sunflower oil, onions, lime juice, garlic, and spices.

Instead of the red wine vinegar typically used in Argentina, lime juice provides a vibrant acidity – a variation reminiscent of the Colombian-Mexican style, and one that pairs better with fish and white meat. With just 6 ingredients, the recipe remains puristic and close to the original. 155g in a jar.

Green herb sauce with parsley and lime

Open the jar, and you're immediately met with the clear, herbaceous aroma of parsley, accompanied by a noticeable garlic note and a hint of lime zest. The color is a vibrant green – it appears bright green when at room temperature, becoming a little darker after refrigeration. The consistency is thick, with visibly finely chopped parsley leaves and onion pieces, not puréed. The classic ratio is 3 parts parsley to 1 part garlic – this proportion determines the flavor profile of the sauce, ensuring every bite is rich in texture.

On the palate, the herbaceous depth of parsley is initially present, with onions adding a mild sweetness. Then, the garlic introduces its warm note, and finally, the lime juice brings a zesty acidity that brings everything together. Salt and spices are understated – the sauce is not a spicy BBQ variant, but rather an herb sauce that supports the grilled food rather than overpowering it. If you prefer more heat, mix in a pinch of chili flakes; that's a matter of taste.

What does Chimichurri go with?

The short answer: everything from the grill. In Argentina, the sauce has been a staple of Asado for generations – beef steak, grilled sausage (chorizo), flank steak, entrecôte. It's not used as a marinade, but rather as a dip or topping spooned over the meat after grilling. There's a reason for this: on a hot grill, delicate herbs burn in seconds and turn bitter.

We particularly enjoy the Königskind version with grilled beef fillet or a medium-rare entrecôte (3 to 4 minutes per side over medium heat) – that's where the lime truly shines. Three partners pair especially well: lamb skewers, pan-fried salmon, grilled scallops. The sauce is a perfect match for all three.

Vegans and vegetarians can serve it with grilled vegetables: bell peppers, zucchini, eggplant, or halloumi get a Mediterranean twist from the herb sauce. We also like it as a dip with crusty baguette or ciabatta, especially when there's some sauce left in the jar. One jar is easily enough for 4 people at an entire Asado.

Alongside the BBQ sauces with local beer and whisky, as well as the Balsamic Onions, this sauce forms the third anchor in Königskind's grilling range. While the BBQ sauces are sweet and smoky for dark meat, and the Balsamic Onions are spicy-sweet for cheese and burgers, the Chimichurri offers a herbaceous and lively note for fish, poultry, and beef steak. Three grilling companions for three moods: smoky-bold, spicy-sweet, herbaceous-lively.

Once opened, the sauce keeps in the refrigerator for 2 to 3 weeks – it's important that the surface remains covered with a thin layer of oil. Before serving, stir once and allow to warm slightly at room temperature to allow the flavors to fully develop.

Königskind from the Oberbergisches Land

The handmade specialties from Königskind are created in Wiehl in the Bergisches Land, where Uwe König meticulously bottles fruit spreads, mustards, chutneys, and grilling accompaniments in his small gourmet manufactory. For over 20 years, the range has grown out of a passion for regional products and traditional recipes – each jar is made by hand, without industrial standards.

This green sauce belongs to the company's grilling line. It showcases Königskind's approach: embracing well-known international classics with artisanal manufacturing quality, without overcomplicating the recipe. A true Chimichurri sauce doesn't need twenty ingredients – six are enough if the base is right. In our Königskind collection, you'll find the entire range, from sweet fruit spreads to fruity-spicy chutneys and grilling sauces.
