Moutarde Saveur Béarnaise – Tarragon Mustard by Martin-Pouret

The Moutarde Saveur Béarnaise is a tarragon mustard from Martin-Pouret in Orléans, France. This flavorful mustard is produced exactly as the mustard manufacturer's tradition dictates. French mustard seeds from the Loire Valley are ground in a stone mill and mixed with salt from Guérande, a little turmeric for color, and homemade vinegar from Orléans to create this wonderfully creamy Moutarde d'Orléans, finely seasoned with tarragon, shallots, and black pepper. But before this mustard releases its full aroma, it is allowed to mature. This is how mustard is made at the Martin-Pouret mustard factory, just as it was hundreds of years ago.

Tarragon mustard is the classic herb mustard when it comes to French mustard, to Moutarde from Orléans. The nutty, yellow and brown mustard seeds develop the typical mustard oils when ground and mashed with water and vinegar, which tingle our noses and define the special taste of mustard.

French mustard is a versatile seasoning paste; the mustard with Béarnaise flavor goes well with steak frites, lamb or game, but also with cream sauces for rabbit, white meat, or fish. The tarragon mustard, with its anise-like aroma, is simply delicious. Here in a 200g jar.

Moutarde Saveur Béarnaise – French Tarragon Mustard

Once, the city of Orléans was the stronghold for vinegar production in France; even the king acknowledged the special quality of vinegar from Orléans in a decree in 1590. However, out of 300 vinegar manufacturers, only one remains: Maison Martin Pouret. Since 1797, they have been producing high-quality vinegar there in a traditional way, which is still allowed to mature in wooden barrels. In addition to vinegar, the company also produces pickled goods, such as gherkins preserved in vinegar, or Moutarde, French mustard.

Besides the quality of the mustard seeds, the quality of the vinegar is crucial for the taste of the mustard. It is therefore no wonder that the Moutarde Saveur Béarnaise, the tarragon mustard from Martin-Pouret, tastes so wonderful.

The unmistakable character and the unique, full-bodied taste of Orléans mustard are based on a traditional recipe handed down from the 18th century, over 200 years of proven expertise of the Maître Vinaigrier, the selection of the best ingredients, as well as the commitment of the new owners David Matheron and Paul-Olivier Claudepierre, who took over the vinegar house in 2019 and proudly look back on a unique heritage, the tradition of the great vinegar masters, which they are now allowed to continue.
