Extra Dark Peppermint Fondants sind einzeln in Stanniol gewickelte Minzpralinen von Summerdown: ein weicher Pfefferminzfondant unter dunkler Schokolade mit 55 Prozent Kakao, abgefüllt im 100-g-Beutel mit Schleife. Keine offene Schachtel, keine Vollmilch, kein Bonbon.
Extra Dark Peppermint Fondants sind gefüllte Minzpralinen der Farm Summerdown in Hampshire, deren Fondantkern und Schokoladenhülle mit dem Black-Mitcham-Pfefferminzöl der eigenen Felder aromatisiert sind. Wer nach dem Essen drei Gästen etwas Kleines anbieten will, steht vor einem bekannten Problem. Eine 200-g-Schachtel geöffnet, drei Stück entnommen, und der Rest trocknet über die Wochen aus oder nimmt den Geruch des Küchenschranks an. Diese Pralinen lösen das mit Stanniol. Jedes Stück ist für sich verschlossen, der Beutel gibt nur so viele frei, wie gerade gebraucht werden. Rund zwölf Pralinen stecken im 100-g-Beutel, verschlossen mit einer Schleife, die kein Geschenkpapier mehr braucht.
Kühler Kern, herbe Hülle, und das Knistern davor
Extra Dark Peppermint Fondants schmecken zuerst nach herbem Kakao, dann nach kühlem Fondant, und die Minze bleibt lange im Mund. Die Hülle ist dünn und bricht knapp. Darunter liegt ein heller Kern, der weich nachgibt, aber nicht ausläuft.
Die Minze wirkt rund und ohne Schärfe, weil Summerdown das Öl vor der Verwendung in Fässern reifen lässt. Der Fondant ist süß, der Kakao mit 55 Prozent hält dagegen. Im Abgang steht die Kühle allein, sauber und ohne kratzige Spitzen.
Vor dem Geschmack kommt das Auswickeln. Das türkisfarbene Stanniol knistert, die Praline darunter glänzt matt, etwa so groß wie eine Zwei-Euro-Münze und deutlich dicker. Acht Gramm wiegt ein Stück, eine Portion, die neben eine Espressotasse passt.
Wer Zartbitter ohne Zuckerkern erwartet, wird diese Pralinen als zu süß empfinden. Der Fondant macht 62 Prozent der Praline aus, die Schokolade 37. Wer es trocken und herb möchte, ist mit den dünnen Talern der Farm besser beraten. Hier steht der Kern im Mittelpunkt, die Hülle rahmt ihn nur.
Die Temperatur verändert die Praline spürbar. Aus dem Kühlschrank ist der Kern fest und die Kühle scharf umrissen, bei Zimmertemperatur wird er cremig und die Süße tritt vor. Beide Zustände haben ihre Anhänger, und der Beutel lässt beides zu.
Drei Stück auf die Untertasse, der Rest bleibt verschlossen
Extra Dark Peppermint Fondants kommen mit dem Kaffee auf den Tisch, je eine Praline auf die Untertasse, noch im Stanniol. Das Auswickeln gehört dazu. Zu einem Espresso ohne Zucker reicht ein Stück, zu einem Filterkaffee aus dunkler Röstung auch.
Im Advent füllen die gewickelten Pralinen einen Adventskalender mit 24 Türchen, zwei Beutel reichen dafür. Auf dem bunten Teller liegen sie zwischen Nüssen und Mandarinen, und weil sie verpackt sind, nehmen sie den Duft der Zitrusschalen nicht an. Für Gäste, die nach dem Essen noch Zug oder Auto vor sich haben, ist eine Praline zum Mitnehmen die höflichere Form des Digestifs.
Zu Getränken passt alles mit Bitterkeit oder Röstung. Ein Amaro, ein Glas Portwein, ein kräftiger Assam ohne Milch. Ein süßer Dessertwein ist nicht geeignet, seine Süße läuft gegen den Fondant. Wer alkoholfrei bleibt, stellt ein Glas kaltes Wasser mit einer Zitronenscheibe dazu, das die Minze verlängert.
Für ein Dessert ohne Aufwand legen Sie eine ausgewickelte Praline auf eine warme, nicht heiße Crêpe und klappen sie zu. Die Hülle schmilzt in einer Minute, der Kern bleibt als kühler Punkt darin. Zwei Pralinen pro Crêpe genügen, mehr macht sie zu süß.
Gut zu wissen: Über 25 Grad wird der Fondant weich und die Hülle matt, im Sommer gehört der Beutel deshalb nicht in die Manteltasche. Kühl und trocken bei 16 bis 18 Grad hält er gut zwei Jahre. Wer den weichen Kern lieber ohne Papier und in größerer Menge möchte, findet ihn in den After Dinner Creams derselben Farm.
Single Estate, Heritage-Reihe und ein Kern aus Kristallen
Summerdown baut bei Basingstoke seit den 1990er Jahren nur eine Pflanze an, die englische Pfefferminze Black Mitcham. Alles Öl für die Schokoladen der Farm stammt von diesen Feldern. Single Estate nennt man das im Wein, und die Farm verwendet den Begriff für ihre Minze mit demselben Anspruch. Kein zugekauftes Aroma, kein Öl aus einer anderen Ernte.
Die Fondants gehören zur Heritage-Reihe des Hauses, der dunkleren Linie für alle, denen die Vollmilch-Sorten zu weich sind. Die Hülle trägt mindestens 55 Prozent Kakao. Das ist weniger als eine Bitterschokolade zum Abbeißen, aber genug, um einen süßen Kern zu tragen.
Der Kern selbst ist ein Fondant, und Fondant ist Zucker in einer bestimmten Ordnung. Zuckersirup wird auf rund 116 Grad gekocht, abgekühlt und dann so lange bewegt, bis er in winzige Kristalle zerfällt. Diese Kristalle sind so klein, dass die Zunge sie nicht mehr einzeln spürt, und so zahlreich, dass die Masse weiß wird. Das Enzym Invertase spaltet danach langsam einen Teil des Zuckers und hält den Kern über Monate weich.
Das Stanniol ist mehr als Zierde. Aluminiumfolie lässt weder Sauerstoff noch Feuchtigkeit noch Fremdgerüche an die Schokolade. Jede Praline bekommt damit ihre eigene Verpackung, unabhängig davon, ob der Beutel offen steht. Fettreif, der graue Schleier auf alter Schokolade, entsteht so deutlich später. Gewickelt wird bereits auf der Farm in Hampshire, wo Praline und Papier direkt nach dem Überziehen zusammenkommen.
Zwölf Pralinen, eine Schleife, kein Geschenkpapier
Was diese Pralinen von der Schachtel unterscheidet, ist die Menge und die Form der Übergabe. Rund zwölf Stück im durchsichtigen Beutel, verschlossen mit einer Schleife in Creme und Mint, fertig ohne Geschenkpapier. Das ist die Größe für den Dank an eine Nachbarin, für den Kollegen zum Abschied oder als Beilage zu einem Blumenstrauß. Mit einem kleinen Anhänger am Band wird der Beutel zur Platzkarte auf der Festtafel, und jeder Gast nimmt sein Stück mit nach Hause.
Für eine Tafelrunde mit acht Personen ist der Beutel zu klein, dafür gibt es die Schachtel. Für ein Dinner zu dritt oder viert ist er genau richtig, und was übrig bleibt, wartet verpackt auf den nächsten Anlass. How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as genussland.de. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.

Our product range includes food items that react differently to heat. To ensure that every product arrives in perfect condition, we handle the shipping of two product groups with particular care.
Products requiring refrigeration
These items are marked with the note "kühlpflichtig" (requires refrigeration) in our shop — for example, Bordier butter, Parmigiano Reggiano from Cavola 993, Pancetta and Guanciale from Falorni, mountain herb ham and Tyrolean dumplings from Steiner, Prosciutto Crudo and truffle butter from Viani. We generally ship these products by express delivery with ice packs. They are only available via express shipping. The shipping costs will be clearly displayed before you complete your order at checkout.
Temperature-sensitive products
These items are marked with the note "temperaturempfindlich" (temperature-sensitive) — for example, salami and bacon specialties from Falorni and Steiner, as well as Goufrais cocoa confectionery. In cooler weather, they can be sent by standard shipping. In warmer weather, we switch the shipping to express shipping with ice packs before checkout — in this case, this shipping method is the only option, and the corresponding shipping costs will be displayed at checkout.
Shipping days for refrigerated and temperature-sensitive orders
To prevent any package from remaining in a distribution center over the weekend or public holidays, we only ship refrigerated orders from Monday to Thursday. Orders placed after Thursday will generally not be shipped until the following Monday. In summer, this rule also applies to temperature-sensitive products.
Packaging
Depending on the manufacturer, sausage and cheese specialties are supplied either vacuum-packed or traditionally without foil — for example, Italian salami from Falorni. If air is visible in a vacuum package upon delivery, this is not a quality defect. Please unpack the item and store it in the refrigerator, ideally wrapped in sausage paper or greaseproof paper.
Freight Forwarding
Freight forwarding is used for products that cannot be delivered as a package due to their size or weight. The selection is made automatically before completing the order. Please provide your phone number for scheduling the freight forwarding delivery.
