Oliver Zeter Pinot Noir - Spätburgunder from the Palatinate

The Oliver Zeter Pinot Noir 2021 is an unfiltered red wine from the Palatinate. The aroma reveals berries, chocolate, bacon, clove and violet, on the palate Oliver Zeter's Pinot Noir is elegant and multifaceted, juicy and finely spiced. A good accompaniment to pan-fried and grilled meat.

Oliver Zeter - Winemaking

The small, loose-berried grapes of the Pinot Noir, grown on sandy loam soils in the Nussdorfer Bischofskreuz vineyard, are destemmed, crushed, and fermented immediately upon arrival at the winery. They remain on the mash for about 2 weeks and are pumped over twice a day. This technique is also known as remontage and is important for red wine production, because during maceration, the solid components of the grapes, the so-called pomace cap, rise to the surface; they contain high-quality tannins, color, and aromatic substances. During remontage, the must is pumped from the bottom to the top so that it can flow over the pomace cap again and the important components are extracted from the pomace. After fermentation, the wine is gently pressed, and then one half is stored in stainless steel tanks and the other half in used barriques for 10 months. It is bottled without filtration. This results in a complex, extracted, velvety red wine.
