Excellent conditions in Mazzon: The vines thrive on the sun-drenched, south-facing slope of Mazzon, located at an altitude of 400 to 450 meters. The 4-hectare vineyard in Mazzon, locally known as "Mason", offers perfect conditions for Pinot Noir, where the grapes achieve optimal ripeness and aromatic expression. The soil, a mixture of sand, clay, and various types of rock, such as dolomite, porphyry, gneiss, and granite, supports the development of the deep aromas that characterize this wine. The 2023 vintage is characterized by a balance of physiological ripeness, sugar content, and acidity, making it particularly well-balanced.
Traditional and natural winemaking: Winemaking focuses strongly on natural processes. Each batch of grapes is harvested separately and spontaneously fermented in open oak barrels, utilizing the grapes' natural yeasts. The must remains in contact with the skins for two to three weeks, with the pomace cap submerged daily to ensure maximum aroma and tannin extraction. After fermentation, the wine matures for 16 months in barriques, 80% in second or third-use barrels and 20% new wood, to emphasize the character of the grapes and not overpower it.
Focus on sustainability: Manincor places great importance on biodynamic cultivation and is a member of Respekt-BIODYN. The approach is clearly geared towards sustainability, including vegan winemaking and detailed waste management. Care is taken to ensure that all packaging materials are environmentally friendly and can be recycled correctly. The corks are sustainable, and the bottles are made of environmentally friendly green glass. The entire production reflects the winery's commitment to sustainability and quality awareness.
Sensory characteristics: In the glass, the wine unfolds a complex bouquet of ripe red and black fruits. Aromas of berries, stone fruit, and roses dominate, followed by a hint of spices, liquorice, and a subtle smoky or bacon note.
