Despite these difficulties, the grapes achieved perfect ripeness, which is reflected in the balanced combination of physiological ripeness, sugar, and acidity. The wine is characterized by ripe fruit aromas and a moderate alcohol content, making it an ideal companion for relaxing moments.
Excellent processing: After selective harvesting, the destemmed grapes were left on the press for four hours to extract as many aromas and structure from the skins as possible. The pressing process was particularly slow and gentle, as finesse is the top priority. Fermentation took place spontaneously with natural, grape-native yeasts in wooden barrels of various sizes. The wine then matured for nine months on the fine lees, further refining its aromas and taste. Ready to drink until the end of 2031.
