The grapes originate from the vineyards "Lieben Aich" in Terlan and "Mazzon" near Kaltern, both of which offer ideal conditions for cultivating these grape varieties due to their unique microclimate and mineral-rich soils.

A White Wine Cuvée for Festive Occasions and Discerning Wine Enthusiasts

Harmony and Challenge: The immense pressure from downy and powdery mildew due to the rainy months of May, June, and July was successfully curbed by biodynamic practices and years of experience. Short, hot spells in July and August transitioned seamlessly into a harvest of healthy grapes under beautiful autumn weather. The result is a wine that impresses with ripe fruit aromas and a moderate alcohol content, making it an ideal companion for relaxed moments.

Excellent Processing: After selective harvesting, the destemmed grapes were left on the press for four hours to extract as much aroma and structure from the skins as possible. The pressing process was particularly slow and gentle, as finesse was the top priority. Fermentation occurred spontaneously with natural, grape-specific yeasts in wooden barrels of various sizes. Subsequently, the wine matured on its fine lees for nine months, further refining its aromas and taste. Ready to drink until the end of 2035.

Focus on Sustainability: Sophie Chardonnay is not only a delight for the palate but is also produced biodynamically and vegan according to the strict Respekt-BIODYN guidelines. This emphasizes the character of the terroir and promotes sustainability and biodiversity. Thus, it reflects the philosophy of the Manincor winery, which is dedicated to sustainable and environmentally friendly wine production.

Ideal for festive occasions: In the glass, the Manincor Sophie Chardonnay 2024 shows a brilliant yellow. Its aroma combines fruity notes of apricots and oranges with floral hints of acacia and lime blossoms. In its depth, it develops a striking minerality reminiscent of wet stone. On the palate, it is dense and powerful, yet elegant with a long-lasting mineral note. The ideal serving temperature is between 8 and 10 °C. To unfold its full aromatic spectrum, this complex white wine should be decanted and served in Burgundy glasses. Perfect as an accompaniment to shellfish and crustaceans, poultry, and rich fish dishes. Also an excellent choice with aromatic cheese.
