Kalk & Stein 2021 – Burgundy Cuvée from Winery Rings [ORGANIC]

The Rings Kalk & Stein 2021 is a bone-dry, white Burgundy cuvée from the Palatinate, with the Chardonnay growing on cool Kallstadt limestone soils and the Pinot Blanc on warm sandstone soils in Ungstein. Thus, the Rings Kalk & Stein combines the best of both grape varieties and both sites: pear and melon, nuts and white flowers, toast and flint, cool salinity and powerful richness.

Rings – Winemaking

The Rings brothers attach great importance to healthy soils, as only from them can healthy vines stand and healthy grapes grow. They start early with sowing buckwheat, clover, and radish, which prevents soil erosion, attracts beneficial insects, and retains moisture in the soil, which is revitalized with the application of horse manure as a natural fertilizer. Canopy management is also important for the quality of the wine: double shoots are removed manually, and depending on the weather conditions, the grapes are defoliated and thinned out to aerate them. Each grape variety was hand-harvested at the optimal time, fermented, pressed, and aged separately, and only blended shortly before bottling. The grapes are hand-picked and selected at the optimal harvest time, and some are pressed as whole bunches. After a short maceration period, the natural yeasts are allowed to work and initiate spontaneous fermentation in wooden barrels. The wine was aged for 16 months on its full lees in large wooden barrels, which Andreas and Steffen handle very well. This makes the wine more complex, multi-layered, and aromatic in a positive sense. The absence of filtration results in a slight cloudiness, so that natural aromas and flavors are preserved in the wine.
