Alpe Pragas – Elderflower Syrup
Delicious Alpe Pragas elderflower syrup made from freshly picked, fragrant, white elderflowers, produced in South Tyrol. Wonderfully refreshing when mixed 1:7 with mineral water, sparkling wine or Prosecco, delicious with vanilla pudding, ice cream, rice pudding, semolina pudding or quark, for refining compote or fresh fruit salad. The elderflower syrup can be used not only to make Hugo, the summer cocktail that started its triumphant march from South Tyrol a few years ago, but also a creamy elderflower sorbet.
Who doesn't love the sweet, unmistakable scent of the elderberry bush (Sambucus nigra) that blossoms from May? It often grows wild along paths, at the edge of forests, and in many gardens. Hand-picked on bright summer days, the umbel is particularly rich in pollen, which is responsible for its intoxicating aroma. For processing into elderflower syrup, the larger stems are first removed by hand, as these would add bitterness to the elderflower syrup. Steeped in sugar syrup with lemon juice, they macerate for a few days, releasing their aromas. The so-called cold extract is then sieved and briefly pasteurized under vacuum at 65 degrees.
